Thai kale with sweet cashew chilli dressing

‘Kitchen Keepers’ is our aptly titiled healthy recipe series,  with the sole intention of promoting tried and tested recipe ideas, taking inspiration from the best vegan and vegetarian chefs and bloggers around.

First up is friend, and much loved natural lifestyle blooger, The Naturalista’s Thai kale salad with sweet cashew chilli dressing, packing a poweful antioxidant punch to help restore post-summer immune systems. An excellent option if, like us, you’re looking for Organic September recipe ideas.

Serves 1

2 big handfuls of kale

1/4 cup cashews

5 tbsp toasted sesame oil

2 tbsp maple syrup or honey

5 tbsp tamari

5 tbsp fresh lime juice

4 tbsp rapeseed oil

1 tsp chilli flakes (optional)

Sea salt and pepper to season

Steam your kale, blend your dressing (there will be lots so you can keep the rest in the fridge), toss some in, garnish and go!
