Recently people have been asking where to pick up a quick healthy snack in the village, and occasionally the request extends to something vegetarian or vegan. There are definitely a few places (Oracle’s Organic Juice Bar being one) but sometimes it’s nice to have options and even better when the latest offering is only a matter of feet from our doorstep.
A couple of weeks ago I caught Blue Jay’s owner (and talented chef) Sherri in the height of excitement. She’d not only employed a kitchen assistant to help with the growing demand for her local & seasonal fare, but this was allowing her to experiment with some ‘quick’n’healthy’ additions to her breakfast and lunchtime menu. On hearing the words ‘homemade granola’ and ‘smoothies’ it wasn’t going to be long before I requested she share her trade secrets. This morning she did just that, and what a great start to the day it was!
1 small cup of frozen blueberries
1 large handful of spinach (or Pak Choi for a more delicate flavour)
1 ripe banana
1/2 cup toasted oats
1 handful of coconut flakes
1 tbsp date syrup
1 cup of coconut milk
Blend all ingredients together until smooth and creamy and serve immediately!
Deliciously filling and ready in less than 5 minutes. The banana is nicely balanced by the fats from the coconut and the toasted oats lend a deep nutty flavour whilst helping to stabilise blood sugar levels. All with a good dose of fibre from the spinach. If you like your smoothies a little less sweet, swap the date syrup for a tablespoon of tahini.
